In a sport that already dances on the fringe of society, ultrarunner Scott Jurek is a true rarity. As one of the athletes who helped make ultramarathons—any race longer than In July, he completed a run across the entire Appalachian Trail , breaking the speed record by over three hours. He finished in 46 days, eight hours, and seven minutes. On top of all this, Jurek also happens to be an accomplished home cook and vegan—he shared his story and favorite recipes in his book, Eat and Run. The plant-based diet, he says, has contributed to his success as a runner, allowing him faster recovery times and better endurance on the trail.

A legend among hard-core runners, Jurek has fashioned a lucrative career as an ultramarathoner. He runs--and wins--grueling races in excess of miles in a wide array of usually inhospitable environments: And he does it on a completely plant-based diet. In Eat and Run , Jurek tells the story of how an average Midwestern kid growing up on meat he caught or killed himself became a vegan elite athlete.

The most inspiring proposal in this book--part memoir, part training guide, part vegan manifesto--is that running, like so many things in life, depends less on physical skill than on willpower. Runners of all levels, meat eaters, and vegans alike will be inspired to lace up their sneaks and hit the trails. See all Editorial Reviews. I love the recipes. My daughter can't get enough of the cabbage salad I started making from one of the recipes. My sister and I email each other discussing snippets of insight from the book and the recipes we are making. We don't cook or bake any more. We "Jurek" our food. The ending was a little abrupt but then again his life isn't over yet so the next chapters are still being written.

For anyone who loves distance running or is considering running this is a great book to read. In a world where we try to find comfort in every second it is refreshing to read about somebody uninterested in instant gratification.

His toughness and determination are values I crave to see in individuals.

Thank you Scott Jurek! Paperback Verified Purchase. This book spoke to my soul!! I am a passionate vegan and I started running again after a 3 year hiatus.

The combination of my plant based diet and running has helped me heal from an anxiety disorder, and my depression from my young daughter's autism diagnosis. For years I've had friends and family scoff at my diet and lifestyle. Reading this book I found extreme comfort, great food ideas, motivation, inspiration, and peace. I know I'm on the right track and this book conforms to every dream and thought that I have felt on how I want to live!

Buy for others

I first read this book after checking it out at the library but ended up buying it here because it was such a good read. Jurek does a good job of balancing race anecdotes with stories from his childhood and personal life. The story flows very well, making it easy to connect with. The same week I read this book I also read "Running Man" by Charlie Engle and "Finding Ultra" by Rich Roll both of which I also loved and would say Jurek's book ranks right up there with them as one of my favorite books.

The book is informational, impressive and inspiring. Besides being amazed by the stories of Jurek's many races, I connected with and was inspired by how he overcame hardship to reach his goals. He also details changes to his diet and training as he began his career in endurance running.

Highly recommend reading this book, regardless of whether or not you are a runner. I think it was the Swedish pancakes.

Hikers and locals brought you food along the way, right? Yes, some did. This one family from Pennsylvania brought us fresh fruit and meat substitutes, and it was amazing because we were having a hard time to find things I could eat at small grocery stores.

Somebody delivered me two boxes of cinnamon rolls and caramel rolls from Vegan Treats based out of Pennsylvania. Just amazing.

One individual brought me avocado maki and vegan pizza, which I was really craving. He hiked up a crazy technical trail for three miles to deliver these random foods. That was one cool thing about the AT.

You mention in your book that you used food to woo your wife Jenny. How'd you do it? Jenny was a typical female bachelor. Food was so integral to my family—with our garden, and hunting wild game and fishing growing up—and it was fun to share that with Jenny.

She had never seen that side of me; she had always just seen me as this quirky ultrarunner. Any parting words? Will be used in accordance with our user agreement and privacy policy.
